This will give them the confidence they need to suggest some great wines to complement your menu and give your guest a great experience. The design of our class includes real examples of what your team faces every day in a logical sequence and language to eliminate the fear of talking about wine.

We validate your team on two aspects of the spirits you offer. We have an interactive class to validate your brands with your terminology... House or well, call, premium...whatever you call them. We fill your custom liquor cabinet in order so they get a basic understanding of your tiers and the value equation for your guests. Next we will help you develop a class for your specialty drinks. It will be complete with all of the specs, facts and unique selling points that will enable your team help your guest make a great choice.

We partner our beer class with your exact list. This will help you accomplish two goals. First, to make sure your team knows what beers you offer, what’s in bottle and “What’s on Tap”. We break your beers into three categories to validate them on what you offer, and where it falls. We will give an introductory class to domestics, imports and Craft & Local offerings, and then pair each story to your list focusing on brand recognition. They will learn how beer is made, where the top brands come from and a short story about each of your beers.

Statistics show that nearly half of the guests that walk into our restaurants simply are not interested in an alcoholic beverage. With the continued emphasis on safe service and driving, there are occasions where an Alcohol Free drink is exactly what the guest wants. Don’t panic! You have lots of options. Guests may only order water because they don’t know all of the options you have to offer. We want to make sure you emphasize the same quality and presentation standards for these drinks as we have for our specialty cocktails. This course is an interesting spin on getting your guests excited about all of the beverages you offer.

Jeff Willison Jeff Willison Partner

Jeff has held senior positions and built teams to deliver best practices and programs for employee and manager learning and validation. He has also implemented process and strategies for product development and deployment of best practices and procedures at all levels of the organization. A certified Blanchard and Covey trainer for the industry, Jeff has implemented leadership development programs in brands such as S&A Restaurants Inc., (Dallas) Rock Bottom Brewery and Old Chicago (Denver) and most recently Marlow's Tavern (Atlanta). Jeff has opened over 100 restaurants throughout his career and his success has been built on operational knowledge combined with effective systems and process implementation at all levels of an organization.

As co-founder of Shift Meeting, Jeff has developed and implemented an online training solution for Marlow's Tavern that trains and develops managers and employees; both back and front of the house. Jeff has a passion for the restaurant business and has worked throughout his career to provide a better learning experience for employees and managers which results in the highest guest satisfaction.

Alan Palmieri Alan Palmieri Partner

Alan Palmieri is a restaurant industry leader with more than 37 years of experience in senior positions in human resources and training and development. Alan achieves goals by building strong teams and company culture that consistently delivers balanced results. He spent his first 13 years in the industry at Norman Brinker's S&A Restaurant Corp. holding senior positions in operations, training, R&D and purchasing before he took their fresh seafood company private as the President and owner. He also was one of the eight founding officers at Boston Chicken (Boston Market) responsible for franchise operations, training, human resources and ultimately, the President of a 100 plus store franchisee.

Alan's most recent 13 years before becoming a founding partner at Shift Meeting were at Darden Restaurants where he was the EVP of Operations at Bahama Breeze. Alan's accomplishments are traced to his broad functional expertise and strong track record of hands-on operational success, profitable sales building, strategic turnarounds, aggressive expansion, human resource development and team building. He has built strong brands by creating a compelling vision and aligning teams throughout the organization.
